Butter Crisp Ice Cream Sandwiches
Last week we made some delicious Butter Crisp Waffle Cones from Jeni’s Splendid Ice Cream. This week we are taking them to another level with ice cream sandwiches.
These bad boys are a perfect summer treat, not too heavy and just sweet enough to satisfy any sugar lover. You can make the crisps the day before a party, then assemble the day of the event and store them in the freezer.
Any flavor of ice cream would go well with the cones, then you can top them off with melting chocolate, sea salt, caramel, etc. You can customize these ice cream sandwiches any way you’d like.
And a note on texture: I tried making the waffle crisps thick and chewy, then thin and crispy. While you can’t go wrong with either one because the batter is delicious, I think the combination of a crispy cone with soft ice cream is perfection.

Ice Cream Sandwiches Recipe
Prep Time: 2 hours
Cook Time: 2-3 minutes per waffle
Serves: 8-10 people
Ingredients
1 batch of Butter Crisp Waffle Crisps, cut into circles and cooled
4 pints of ice cream (any flavor)
1 bag melting chocolate
Sea salt or other toppings to taste
Directions
1. Cook your waffle crisps and let cool on a wire rack. To make them a perfect circle, place the hot crisp directly from the iron on to a cutting board and use a steak knife to cut around a 1-cup measuring cup. You can also use a cookie cutter.
2. When you have all your crisps done, set up a station to quickly make your ice cream sandwiches.
3. Melt the chocolate and spread a layer of chocolate on the inside of one of the crisps.
4. Pull out the ice cream, place the pint on its side and use a bread knife to slice ovals to fit the sandwiches.
5. Place the ice cream oval on your crisp with the chocolate, then top with another crisp.
6. Have fun experimenting and decorating, adding sea salt or caramel or anything else your heart desires.
