A Cozy Autumn Breakfast

Tell me, is there anything better than waking up all cozy on a chilly autumn morning to the smell of cinnamon rolls in the oven? Fall is my absolute favorite season and a batch of cinnamon rolls makes it even better. Of course, they go perfectly with a Christmas morning as well. 

I’ll be honest with you, I tried a few different cinnamon roll recipes for this one and I’m not sure if it was my kitchen or just being unlucky but most of the batches would not rise. One time the culprit was yeast that was too old. After a few tries, I still managed to eke these rolls out and they were still delicious.

Cinnamon Rolls

Prep Time: 3 hours

Cook Time: 30 minutes

Serves: 8-10 people

 

Ingredients — Yeast Mixture

¾ cup lukewarm water

2½ tsp active dry yeast

1 Tbsp sugar

Ingredients — Dough

⅓ cup sugar 

1 egg + 1 egg yolk, whisked

3 cups AP flour

1 tsp kosher salt

4 Tbsp melted butter, unsalted

Ingredients — Filling

⅓ cup unsalted butter, room temperature

1 cup packed brown sugar

2 Tbsp cinnamon

⅛ ground cloves 

dash of nutmeg

Ingredients — Frosting

4 ounces cream, room temp

3 Tbsp unsalted butter, room temp

1 tsp vanilla extract

¾ cup powdered sugar, sifted

 

 Directions

1. Set out a glass measuring cup and mix yeast mixture (water, yeast, sugar). Cover with a damp paper towel and let rest for about 10 minutes.

2. In a medium mixing bowl, add dough ingredients, then add yeast mixture.

3. Mix dough together with hands or a wooden spoon until a rough dough forms.

4. Lightly flour a clean surface and knead dough for 10 minutes until dough is smooth.

5. Place dough in a large, lightly floured bowl. Cover with a damp cloth and let rest for 1-2 hours until dough is doubled in size.

6. While dough is rising, make the frosting and filing by combining respective ingredients in separate bowls. Set aside.

7. Once dough is doubled in size, punch it down and place on a floured surface again. 

8. Roll out dough into a rectangle shape and spread filling.

9. Roll up dough and cut into 1-inch sections (make larger cuts for larger but fewer cinnamon roll).

 10. Put rolls in a baking dish (spray with nonstick spray or place parchment paper).

11. Cover again with a damp cloth and let rise for 30 minutes. You can also place in the fridge and let rise over night. 

12. Bake at 350° for 25-30 minutes until golden brown.
